The former Miss Universe Ireland has been making regular appearances on TV3's Xpose and wants to pursue a career as a television presenter.
"I wouldn't really consider doing reality TV shows - if I want to become well-known abroad it will be for working hard," she said.
"I'd like to focus on carving a career - I'd like to actually work towards something rather then actually doing lots of reality TV."
Fellow model and Former Miss World Rosanna Davison (30) was also approached to appear on the reality show but declined.
"I have been approached a few times to do the show but I don't think it's really for me," she explained.
"I would refuse to eat bits of kangaroo," she added.
Feature: Roz Purcell: A suitable girl ready for a second act
Dublin model Nadia (25) will be the first Irish woman to enter the jungle when the show starts on Sunday.
Meanwhile, Tipperary beauty Roz (24) has been cooking up a storm on her blog, Natural Born Feeder, and wants to take her passion for food to our television screens with her own TV show.
"I'd be lying if I said I didn't want to carry on with it into the future and turn it into a TV show or something like that," she said.
"Who wouldn't love to have their own baking show on TV, especially if you're someone like me and you love creating new recipes and getting people into the kitchen."
But she's loving her segments on Xpose and is learning more about nutrition to bring her blog further.
"I'm really enjoying it, it's really fun. It's so much easier when it's your passion."
