Matthew Donnelly bagged six points as Jordanstown registered the biggest win of the day.
Cork IT, the 2009 champions, failed to score between the 21st and 52nd minutes and managed only one point in the second half.
Jordanstown were in fine form, with seven players on target.
UUJ led by 0-9 to 0-3 at half-time, with Ciaran Sheehan, Donal Og Hodnett and Barry John Walsh claiming CIT's scores.
Any hopes of a CIT fightback were killed off 20 seconds after the restart when Conor McManus goaled.
UUJ dominated midfield and had opened up a 1-15 to 0-3 lead by the 49th minute.
Sheehan battled hard for CIT, but UUJ always had their measure.
