It was the fruits of quite a bit of planning and preparation for Paul Cullen and Craig O’Toole on Friday night as they rolled out the red carpet and hosted the official opening of their new Mexican restaurant CDMX in Cornmarket.

Having already enjoyed considerable success over the past year with 10 West Bistro, Paul and Craig took the plunge on another of their ideas when the Cornmarket premises became available, creating some 25 new jobs in the process, and last week they saw their dream become a reality in an explosion of colour.

Among the invited guests were Thomas Olvera from the office of the Mexican Ambassador to Ireland, Juan Sinhue Flores-Ocampo of Red Global MX (a global Mexican business community) as well as Mayor of Wexford Maura Bell, Cathaoirleach of Wexford County Council George Lawlor and Brendan Howlin TD.

“Everyone was very generous with their feedback,” Paul said. “Mexican culture is such a colourful culture. The food is colourful, everything is colourful and we really wanted to tap into that with CDMX. It’s a little more light and fluffy than what we offer at 10 West, but the feedback so far has been really, really positive.”

With Mexican folk musicians and traditional dancers, launch weekend was a big success and the pre-opening nerves have now subsided somewhat.

"I was a little bit apprehensive initially,” Paul said. “We had created a sort of expectation with 10 West and we were keen to live up to it. Plus what we’re offering is a bit niche, but thankfully the opening went really well and we’re looking forward to tweaking things as we go along.”
