Tony Carty has joined the Crown Quarter team as executive head chef as it prepares to open Wexford’s newest restaurant Jasper’s on July 1.

Tony brings 38 years’ experience as a professional chef. Having trained at Kelly’s Resort Hotel, he moved to Dublin to be part of the opening team of The Conrad Hilton Hotel, Ireland’s first purpose-built five-star hotel.

From there travelled to Switzerland where he spent two years expanding his culinary experience. Returning to Ireland Tony worked at The K Club, Kildare and Les Frere Jacques, Dublin, before heading back to Wexford where he began his long association with the Ferrycarrig Hotel.

He took a six-month leave of absence to work at The Hyatt Hotel in the Cayman Islands before returning to the Ferrycarrig to become head chef. Since then he has overseen the growth and development of Ferrycarrig and led his team to achieve many accolades including being the first hotel in Wexford town area to achieve four-star status, winning wedding venue of the year, best Sunday lunch, and best hotel restaurant in Co Wexford.

Tony is passionate about supporting local Wexford produce and is extremely excited to welcome all the new customers to Jasper’s restaurant at Crown Quarter from July 1 to enjoy the dishes he has created.
