Martina's food impresses at Galway festival
A COOLANEY mum brushed off competition from hundreds of cooking enthusiasts for a final place at the Galway International Oyster Festival.
Martina Flatley was the only Sligo representative at the cookery contest, held in a marquee on the docks.
She said: "I love cooking, although I am not a chef or anything. I have done a few cookery courses here in Sligo. For the competition, I made a slow roasted peppered pork with colcannon and vegetables.
"I was delighted to be among the final four, although I didn't win."
A mother to three children, aged 20, 17 and 13, Martina is a big fan of fresh ingredients.
"With my daughter in college, I worry that she might not be eating properly. I'm currently writing a book with recipes ideal for students in college. They are simple, nutritious meals for people on a budget. I hope to have it finished by March."
Martina makes her own pestos and chutneys as part of her company Soul Food Cuisine.
"It's early days yet, though I have a few customers."
She is hoping to sell to local shops and restaurants.
"I like home-grown herbs, I don't like using preservatives. My motto is all about growing your own vegetables organically."
She laughed that the sun-room in her home is 'full' of shooting vegetables and herbs.
