A Waterford blaa to fill. Spiced beef (Cork and Christmas are too narrow a focus for such a wonderful protein). Fresh lemonade (reminds me of my granny and she had picnics covered).

I'd rarely be without some St Tola goat's curd and with that summer vegetables dressed with Newgrange Gold oil and not much else apart from salt and pepper.

Poached Irish wild salmon is something we are seeing coming back again (hurrah). Wrapped in tin foil, it travels well and only wants mayonnaise. Homemade, naturally!
