On Friday night i'd: Well, having just opened a restaurant on Parnell Square, my Friday night is spent in the heart of the city, in the basement of No 38 where the buzz in the kitchen is more energetic than any nightclub.
My favourite stiff drink is: With all the recent wine tasting for our new menu, Valdivieso Reserva of Chile is a favourite of mine and currently on our wine list.
Saturday morning lie-on or gym session: For me it's a lie-on, I'm a complete night owl thinking through menu ideas until the early hours, macaroons or truffles? I really cherish a chance to keep my head on the pillow for an extra hour.
My favourite item of clothing is: At the moment I'm in love with a John Rocha cashmere long jumper in cream and just the right amount of sparkle, it's real cuddle-up weekend wear for winter.
My Saturday night fever: Well, Saturday night can go in two different directions – it's our busiest night in the restaurant, which means you can be so wrecked, a glass of wine and reflecting on how the week went is all you're up for. Yet mostly you're so full of adrenaline and almost always off on a Sunday that you head out to blow off some steam!
My favourite hangover cure: Has to be sleep, plenty of water and brunch. I love Eggs Benedict Royale (with salmon) – serious feelgood food.
On Sunday I rest by: To me, Sunday is a family day. I like nothing more than running around after my niece and two nephews and passing out with them for an afternoon nap.
I'm currently reading: I like relaxing with the Sunday papers, but mostly my nose will be stuck in a cookbook of one of the culinary greats – Heston Blumenthal, Rene Redzepi, Thomas Keller to name a few.
My last supper: I have to say red wine slow-braised beef cheek with potato mash and baby winter vegetables.
