Herb Cuisine Marinated Salmon with Turmeric and Spicy Rice

Ingredients:

4 portions of salmon darnes

Herb oil

3 tbsp Flora Cuisine

1 tbsp chopped coriander

1 tbsp chopped parsley

1 large clove

Chopped garlic

Juice of 1 small lemon

A little salt and pepper

 

Turmeric and Spice Rice

1 tbsp Flora Cuisine

50g finely chopped onion

200g long grain rice

400ml boiling water

1 tsp ground turmeric

1 tsp ground coriander

1-2 tsp ground cumin

A little salt and pepper

 

Method:

1. Make the herb oil by whisking all the herbs, Flora Cuisine and salt and pepper until well blended.

2. Place salmon in the bowl; pour the herb oil over cover with cling film and leave to marinate in the fridge for 1-2 hours.

3. Pre-heat the oven to 200C. Melt the Flora Cuisine in an oven-proof casserole, add the onion and sweat it gently for one minute.

4. Add the rice, increase the heat slightly and cook for about two minutes, stirring with a wooden spoon until the rice becomes translucent.

5. Pour on the boiling water, add all the herb and spices, season with salt, cover and cook in the oven for about 20 minutes. Leave the rice to rest then fork through the rice and adjust seasoning.

6. Heat 2 tbsp of Flora Cuisine in a non-stick pan; cook the salmon skin side down until the skin crispy, then transfer to the preheated oven cook for further five minutes

7. Remove salmon from the oven and serve with the turmeric and spicy rice
