>Pancakes 3 ways
Makes approx 20 pancakes
Ingredients:
25g Flora Buttery -- plus extra for greasing the pan.
250g plain flour, sifted
Pinch salt (optional)
2 eggs
500ml milk
Method:
> To make the pancake batter, melt the Flora Buttery in a frying pan.
> Sift the flour and salt into a bowl. Add the eggs and half the milk and whisk until smooth, adding the rest of the milk and 2tbsp of the melted Flora as you go.
> Transfer to a jug to make pouring easier.
> Ensure the pan is hot but not smoking and always have a little bit of Flora to swill around. Add a dollop of the batter to the pan and cook on both sides until golden, using a spatula or -- if you're brave -- try tossing the pancake in the air!
> Now serve with one of the suggestions below.
Options . . .
> For a teatime treat -- warm honeyed blueberries:
Place 100g blueberries and 2tbsp honey in a small pan. Bring to the boil, stirring and squishing, then allow to simmer for a minute or two. Or try it with agave syrup rather than honey.
> Something different for lunch -- cheesy leeks and peas:
Melt 1tsp Flora Buttery in a pan. Add 100g chopped leeks and sauté for about three minutes. Add 100g frozen peas and continue stirring for another couple of minutes. Stir through 50g reduced-fat cream cheese.
You could also add grated cheese and a twist of black pepper perks up the taste.
