Recipe for a healthy race diet

Crunchy chicken stir-fry with sticky orange sauce

Serves: 4

Preparation time: 10 minutes

Cooking time: 15-20 minutes


40g (2½oz) Flora spread

300g (10oz) skinless chicken breasts, finely sliced

1 clove garlic, crushed

2.5cm root ginger, grated

1 pack stir-fry vegetables


2 tbsp sodium-reduced soysauce

150ml (¼ pint) orange juice

1 tbsp runny honey

1 tbsp white-wine vinegar or lemon juice

2 tsp cornflour, blended with a little water


>Heat the spread and stir fry the chicken for 5 minutes.

>Add the garlic and ginger with the vegetables and stir fry for a further 5-10 minutes until almost cooked.

>Add all the sauce ingredients and bring to the boil, stirring.

>Reduce heat and simmer for 5 mins until chicken is cooked.

>Serve with tagliatelle or noodles.
