Caesar salad (serves six): Ingredients: 2 medium heads of cos lettuce €2.50, 1 slice of white bread, 1 clove garlic €0.05, 1tsp Dijon mustard €0.10, 1bsp lemon juice €0.10, 1 egg yolk €0.30, 6 anchovy fillets €1, 100ml olive oil €0.10, parmesan €0.10

>Wash the lettuce and tear it into strips. Make some croutons by frying cubes of white bread in oil until crisp and brown and rub each cube with a cut garlic clove.
>Mash a large clove of garlic with the blade of a knife until completely soft and add to a bowl. Add the mustard, lemon juice, egg yolk and anchovy fillets. Pound using a wooden spoon until you have a smooth paste or use a pestle and mortar if one is available.
>Gradually add 100ml of olive oil, stirring all the time until you have a thick creamy dressing.
>Add the croutons to the leaves along with some extra anchovy fillets (optional) and mix in the dressing using two forks or your hands.
>Top with lots and lots of shaved parmesan, serve on its own or with warm, crusty bread.
