Derek's sausages in All-Ireland final

Local butcher Derek Dunne has won big again, this time scooping the award for the best traditional sausage in Leinster.

Last week, Derek, who has been in business on Wicklow town's main street for 31 years, won the best traditional butcher-style sausage competition.

Held in Portlaoise, Derek's bangers were the judges' favourite from some 60 other competitors who all hailed from around the province.

Now, the local butcher's humble sausage – made and available only in his shop – will go forward to the exclusive all-Ireland stage of the competition.

While the competition this September will be fierce, Derek hopes his bangers have what it takes to sizzle their way to success.

'I've been making the same sausages here in the shop since I opened and, before that, for too long than I care to remember,' said chuffed chopper Derek.

'So it's great that we've been recognised like this in such a prestigious competition.'

In the 2013 event, Derek missed out on entering by arriving late for the competition.

But this year, he swept the board with his traditional butcher-style sausage. The sausages were subjected to two tests, appearance and taste, and according to the team of judges, the Wicklow sausages went down a storm.

'I was unlucky last year so perhaps that played a part this year,' he said.

'It's the same recipe that my father taught me and his father before him, so we're not going to change it now and hopefully we can take home the all-Ireland prize.'

He added: 'It would be unbelievable if we could manage to win but the competition is fierce and there are plenty of other great sausage makers out there, so fingers crossed.'

Derek has also extended an invite to all locals to go to his Regatta Festival sausage eating competition on Friday night of the bank holiday weekend.

'We've held it for a few years in the Leitrim Lounge and it is great sport. Make sure you haven't eaten before you come down though, because now you'll be trying to eat as many of the best sausages in Leinster as you can.'
