Crushed new potatoes with paprika

I don't think you can do a whole lot better than boiling new potatoes with a sprig of mint, but this recipe poshes them up somewhat.

These will be delicious served cold the next day (if there's any left over, which is unlikely).

Serves four.


* 12-15 small new potatoes

* Olive oil

* Paprika


Boil the potatoes for 10 minutes and then drain them.

Arrange on a baking tray and crush each potato lightly with a potato masher.

Drizzle with olive oil and sprinkle with sea salt, black pepper and a little paprika.

Bake in a hot oven (180 degrees celsius) for 20 minutes.
