Salads are simple to make and healthy to eat - well, until you pour a gallon of creamy, calorie-laden dressing on to them.

This recipe, for a healthy alternative, comes courtesy of my flatmate. It's one of my favourite ways to add interest to a salad without adding unhealthy ingredients.

You will need

2 large teaspoons of coconut oil

2 tablespoons of white wine vinegar

2 cloves of minced garlic

½ teaspoon of basil, finely chopped

½ teaspoon of thyme, finely chopped

½ tablespoon of Dijon mustard

Pinch of pepper to taste

Method

Simply place all ingredients into a bowl or glass and mix thoroughly. The dressing will keep for a few days if refrigerated.
