HEALTHY SNACK: Yummy almond pesto

This is great as a pasta dressing, or on wholegrain bread. Try it for yourself. It's surprisingly easy to make and is a seriously healthy snack.

You will need

1 cup of raw almonds

1 large bag of basil

Juice of 2 limes

Juice of ½ a lemon

¼ cup of coconut oil, or olive oil if you prefer


Soak the almonds in water overnight. Rinse them in the morning with cold water and take off the skins. Prepare your basil by cutting the stems off and rinsing/drying the leaves.Juice the limes and lemon.Put all ingredients in a food processor and blend thoroughly so that it's nice and smooth.
