Feast your eyes on ingredients to nurture good vision
This week saw the launch of the 'Eye am what I eat' campaign, to raise awareness of Diabetic Macular Edema (DME).
A host of organisations – Diabetes Ireland, NCBI, Fighting Blindness, the Irish College of Ophthalmologists and the Association of Optometrists Ireland, supported by Novartis – are working together to promote eating for eye health and increase public awareness of DME, the most common form of Diabetic Retinopathy which is the biggest cause of blindness in working-age adults in Ireland.
They also aim to highlight the importance of people with diabetes getting their eyes screened regularly.
To get involved, people are invited to develop a recipe using any combination of the top 10 foods for eye health listed at www.eyeamwhatIeat.ie by 5pm, Monday May 26. A judging panel, including chef, Andrew Rudd, will shortlist four entries for a final event in Dublin in June, hosted by Radio & TV personality, Ronan Collins, where an overall winner will be selected. Prizes include a six course tasting menu, prepared by Andrew Rudd at Medley, his private dining venue in Dublin city centre.
Eat healthily and save cash
It's possible to eat healthily and save money. Here are some tips:
* Write a shopping list. Don't be swayed by special offers, just buy what you need.
* Waste nothing. Be strict about buying only what you'll actually eat. If necessary, freeze any unused food.
* Eat leftovers for lunch. Cooking extra portions for your evening meal so that you can have the leftovers for lunch the next day saves time and money.
* Buy frozen. Frozen fruit and vegetables are underrated.
* Cook with pulses. Beans, lentils and peas, are some of the cheapest foods on the supermarket shelf.
* Freeze leftover bread. It is the most wasted household food.
* Buy chicken whole – it's the cheapest way to buy chicken.
* Consider the deli counter for cheese and cured meats. You can get exact amounts, which is cheaper and less wasteful.
