David Gillick's Recipes: Mixed Bean Salad

Ingredients

2 x 400g cans of mixed beans, drained and rinsed; 250g cherry tomatoes, halved; 2 spring onions, finely sliced; 1 small bunch of fresh parsley leaves

Dressing:

2 tbsp olive oil, 1 tbsp red wine vinegar, 1 tsp wholegrain mustard

Serves 4

Combine the drained mixed beans, cherry tomatoes, spring onions and parsley leaves in a large bowl.

In a separate small bowl, whisk together the oil, vinegar and mustard.

Add the dressing to the bowl of beans. Toss to combine and serve straight away.
