vegan spelt chocolate brownie

makes 12 brownies

175g Mori-Nu silken tofu

6 tbsps water

8 tbsps agave syrup, or maple syrup or honey

60g cocoa powder

½ tbsp ground flax seeds

1½ tbsps hot water

2 tsps vanilla extract

100g white flour

65g wholewheat spelt flour

200g sugar

¼ tsp baking powder

¼ tsp salt

50g dark chocolate chips

1 Mix the ground flax seeds with one-and-a-half tablespoons of hot water and set aside to thicken. Pre-heat the oven to 180°C, then lightly oil an 8in x 8in x 2in glass baking pan and set aside.

2Blend the tofu, water, agave syrup (or substitute), cocoa powder, flax seed mixture and vanilla extract until it is completely smooth.

3Place the remaining ingredients, except the chocolate chips, in a mixing bowl and stir until they are well combined. Then pour the wet mixture into the dry ingredients in the mixing bowl, and stir them until they are well combined. Finally, fold in the chocolate chips.

4Pour the batter into the prepared baking pan and bake on the centre rack of the oven for 30 minutes, or until a cake tester inserted in the centre of the brownies comes out clean. Once they are cool, cut them into squares and serve. They taste delicious the next day.
