YOU WILL NEED
8 ripe plum tomatoes, cut into chunks
½ medium onion, diced roughly
2 cloves of garlic, crushed
8oz/225g caster sugar
3½ fl oz/100ml red wine vinegar
1 rounded dessertspoon of dried chilli flakes
2fl oz/50ml water
Place all of the ingredients together in a large saucepan. Boil for around 20 minutes or until the tomatoes have softened and cooked and about 1/3 of your cooking liquor has reduced.
Transfer to a jar and use as required.
