The Veggie-Style Aussie Burger


Makes four

You will need

4 of your favourite frozen veggie burgers (such as Good Life Spicy Bean Quarterpounders)

4 slices fresh pineapple

2 large red onions

4 free-range eggs

4 brown pitta breads

Handful alfalfa sprouts

1 avocado, sliced

2 medium cooked beetroots, sliced

Organic low-sugar tomato sauce


Grill the burgers and pineapple slices until hot all the way through.

Cut the onions into rings and sauté in a pan until soft. Fry the eggs until they are cooked the way you like them.

Lightly toast the pitta breads and slice in half, so you have a top and bottom layer.

Lay one cooked burger on each bottom half of the bread followed by a fried egg. Layer with the remaining ingredients, then finally add the top of the bread.
