The Perfect Skinny Fries
Makes enough for two greedy skinny-fry lovers.
YOU WILL NEED
Rapeseed or sunflower oil
4 large baking potatoes, cut into long skinny chips (leave the skin on as it adds flavour and is a good source of fibre)
1 tbsp olive oil
2 sprigs rosemary, leaves removed and finely chopped
Sea salt and freshly ground black pepper
Pre-heat the oven to 200°C/Gas Mark 6. Put a frying pan on a hob and fill it two-thirds full with rapeseed oil. Turn the heat up as far as it can go.
Dab the raw potato with kitchen paper to remove any moisture. When the oil is hot, use a slotted spoon to place a batch of fries into the oil. They should take four to five minutes to cook. Work in as many batches as you need to cook all the fries.
Remove the fries from the oil and toss in olive oil, rosemary and salt and pepper, then cook in the oven for five minutes.
