His other half, Natalie is first on the list on the chef's loves as well as his boys and parents.

The person

Natalie, my other half and best friend

The memory

Going into work with my dad to George's Bistro, and the chefs in the kitchen teaching me how to cook

The moment of the day

When I'm home early enough to tuck my boys into bed

The song

I'm a big fan of the Irish DJ Kormac, so anything by him

The movie

Super Troopers, it cracks me up just thinking of it!

The hero

My mum and dad - they have always been such an inspiration to me and such a support in everything I've ever done

The book

I'm doing a lot of foraging, so I'm never without my copy of Edible Seashore by John Wright

The outfit

My whites - it's great to get them on and surround myself with lots of amazing, sustainable Irish seafood

The pet hate

Negativity - it achieves nothing

The accessory

My partner, Natalie

The gadget

It's got to be my iPhone! The friend

My partner, Natalie, and my parents

The beauty product

A swim in the sea. There's nothing better to brighten you up

The holiday

Perissa Beach on Santorini, Greece. Amazing food, people and waters around the island

The piece of advice

Be positive and love what you do

The drink

A big, bold red wine

The hotel

The Winter Palace in Luxor, Egypt - sheer luxury; or The Lord Bagenal in Leighlinbridge, Co Carlow - great food, and personal service with a smile

The bar

The bar in Rock Lobster, naturally! Great tunes, craft beer and mind-blowing cocktails

The hobby

Anything that gets me into the sea: sailing, kayaking, surfing, diving, or swimming

The part of my body

My banjaxed hands from working in kitchens

The celebrity

Michael O'Leary. He has revolutionised air travel in Europe and done so with humour on his side

The virtue

I hope it's that I try to always see the good in someone

The vice

Chicken wings. Our chef, Florin, came up with the most amazing sauce that just keeps you going back for more and more

The smell

One of our dry-aged steaks on the grill! I'm salivating just thinking of it

The taste

Easy, a piece of fresh fish! I could eat it all day and every day (which I tend to)
