This is a lovely simple dish that takes only minutes to make, is full of flavour and offers a great source of protein. It's a perfect camping dish, too, as there is so little prep and cooking involved. Serves one.
YOU WILL NEED
2 slices homemade bread or thick-cut bread, toasted
1 clove garlic
1 tbsp salsa
1 tin sardines in olive oil
Salt and pepper, to season
Bunch of fresh green herbs, such as basil
Lemon wedge, to serve
Toast the bread, then rub a clove of garlic over the toast. This simple approach gives great flavour. Now build the bruschetta by spreading the salsa over the toast.
Drain the sardines and place them on top of the salsa.
Sprinkle the bruschetta with salt and pepper, top with the basil leaves and serve with a lemon wedge.
Eat straight away to avoid the toast going soggy from the salsa. You can pimp it up by adding some al dente fine green beans and some chickpeas.
This is great with a glass of cold, dry white wine, or a buttery Chardonnay.
