Neven Maguire’s ‘Family Friendly’ Chicken Curry is the recipe most viewed by Independent.ie readers and we took a trip to Macnean House and Cookery School in Co. Cavan to watch Ireland’s most beloved chef whip up the family favourite.
“This delicious recipe is a quick and nutritious alternative to what you might be tempted to order in on a Friday night and it is a real family favourite,” said Neven.
“This is one of the first curries I ever made and it’s very mild and suitable for the whole family.
“Of course you can add some fresh chilli with your garlic and onion for some spice,” he said.
1 large onion diced
5cm (2in) piece of fresh root ginger, peeled and finely grated
2 gloves garlic crushed
2 tbsp mild curry powder
1 small jar mango chutney
1 can chopped tomatoes
1 can of coconut milk
2 tbsp freshly chopped coriander
4 skinless chicken breast fillets, cut into thick strips
Gently cook onion, ginger and garlic with a tablespoon of rapeseed oil in a saucepan for five minutes or until soft, stir in curry powder and cook on a low heat for five more minutes.
Slowly add in chopped tomatoes and coconut milk and then add the small jar of mango chutney (three tablespoons) and season to taste. Add in the chopped coriander and chicken and cook for 15-20minutes.
Serve with steamed jasmine rice, wedges or a wholesome baked potato.
