The telly-famous hotelier and chef Catherine Fulvio knock together Honey Marinated Pork Chops with Mango Salsa during an afternoon spent in the kitchen.

Irish hotelier Francis Brennan got more than he bargained for this week when he took to the kitchen with chef Catherine Fulvio.

The unlikely kitchen companions set out to knock up one of Catherine’s favourite family dinners but all At Your Service star Francis was left with was the sink full of washing up.

With an Independent.ie mic in hand, Francis quizzed Catherine on the makings of her honey marinated pork chops quipping that her mango salsa accompaniment was ‘very exotic’.

The duo hit a speed bump in their feast making when Francis struggled to even turn the hob on, a problem which was quickly solved by in-the-know Catherine.

“People often forget that pork can be a fantastic everyday meal option. There are so many quick and versatile ways to cook pork,” said Catherine.

The pair were in Dublin promoting the Bord Bia ‘Pork Deliciously Versatile’.

To recreate the Catherine/Francis magic in your own kitchen, here is Catherine’s foolproof recipe.

 

Honey Marinated Pork Chops with Mango Salsa and Sautéed Spinach

This recipe is really quick to prepare and cook and perfect for a tasty evening meal for you and your family. The mango and chilli in the salsa compliment the natural flavour of the pork.

Serves: 4

Time: 30 minutes

4  pork chops, well trimmed

Salt and freshly ground black pepper

Marinade

1 tablesp. honey

Grated rind and juice of 1 lemon

2 garlic cloves, peeled and crushed

2 tablesp. fish sauce

1 tablesp. olive oil

Salsa

1 large mango, peeled and diced

1 red chilli, deseeded and finely chopped

1 garlic clove, peeled and crushed

2 scallions, finely sliced

Juice of 1 lime

1 tablesp. olive oil

Stir-fried Spinach

A little oil

1 garlic clove, peeled and crushed

1 red pepper, deseeded and cut into strips

500g spinach, washed and tough stalks removed

To serve: Baked potatoes

Combine all the marinade ingredients. Place the chops in a dish and pour over the marinade. If you have time allow the chops to marinate for 15-20 minutes.

Meanwhile to make the salsa combine all the ingredients in a bowl, season and taste.

Preheat the grill or barbecue. Cook the pork chops for three to four minutes on each side, depending on thickness.

While the chops are cooking heat a little oil in a wok or large frying pan. Add the garlic and red pepper and stir-fry for a minute. Then add in the spinach and stir-fry until it begins to wilt.

Serve the chops with the mango salsa, stir-fried spinach and baked potatoes.
