Three dreamy cupcake recipes to perk up your gloomy January

It’s difficult enough to brace yourself for Monday morning but the third Monday of January is notorious for being the most grim of the entire year.

After leaving the festive Christmas fun behind, the gloss that comes with the ‘new year new me’ mantra begins to wear thin.

Christened ‘Blue Monday’ today is meant to be the gloomiest of 2015 which is why one could never be faulted for treating themselves to a cupcake or two to ease the pain.

Here are some easy but dreamy recipes which will go a long way to boosting your spirits.

Red Velvet Cupcakes

Cakes

200g of self raising flour

170g castor sugar

100g unsalted butter

2 large eggs

2 tablespoons of cocoa

2 teaspoons of vanilla extract

130mls low fat milk

Red food colouring

Icing

100g butter

400g cream cheese

250g icing sugar

1 tsp of lemon juice

Sprinkles for decoration

Method

Preheat the oven to 180C and line two cupcake tins with 12 cupcake cases.

Combine the flour and cocoa in a bowl.

In a separate bowl beat together the butter and sugar until light and fluffy. Beat in your eggs one at a time and add the vanilla extract.

Colour the mixture using your food dye until it is deep red.

Softly fold in the dry ingredients and the milk, a little bit of each at a time.

Evenly distribute the mixture into 12 cupcake tins and bake for 2o minutes or until a skewer comes out of the cakes clean. Allow to cool.

To make the icing, beat together all of the ingredients. Top the cakes with sprinkles.

 

Lemon Meringue Cupcakes

Cakes

100g unsalted butter

170g castor sugar

The zest of 2 lemons

2 large eggs

200g self raising flour

130mls full-fat milk

Lemon Curd

4 lemons, zest and juice

200g castor sugar

100g unsalted butter

3 large eggs, 1 yolk

Icing

Three meringue nests crushed

100g butter

400g cream cheese

250g icing sugar

Method

Preheat the oven to 180C

Line your cupcake tin with cupcake cases.

In a large bowl beat the butter together with the castor sugar until light and fluffy. Add the zest of two lemons.

Next add one egg at room temperature to the mixture. Mix lightly before adding the second egg.

Gently fold through the sieved flour and milk, a little bit of each at a time.

Evenly divide the mixture into twelve cupcake cases. Bake the cakes for 15 – 20 minutes until golden. Allow to cool.

Lemon Curd

To make the lemon curd place the lemon zest, butter, sugar and juice into a large heat proof. Place the bowl over a pan of simmering water but make sure the bottom of the bowl is not touching the water.

Whisk the eggs lightly before adding them to the lemon mixture. Stir the mixture with a wooden spoon until the mixture thickens. This should take 10-12 minutes.

Allow to cool.

Icing

To make the icing, beat together all of the ingredients, before adding the crushed meringue nests. Set aside.

To assemble

With a small spoon, scoop a hole in the top of each cupcake and add a spoonful of lemon curd into each one. Top each cake with icing.

 

Super Simple Chocolate Cupcakes

Ingredients

250g self raising flour

130g castor sugar

20g cocoa

100g chocolate chips

1 large egg

100mls milk

125 g unsalted butter

Method

Preheat the oven to 180C.

Beat the butter and sugar together in a large bowl until light and fluffy. Add your eggs one at a time and fold through.

In a separate bowl mix together all of your dry ingredients.

Add the dry ingredients to the wet ingredients a little bit at a time. Add your chocolate chips.

Lightly mix your milk into the mixture and distribute evenly throughout 12 cupcake cases.

Bake for 20 minutes and allow to cool.
