This is a great way to make up a delicious platter of crostini using some home-made ingredients and some shop-bought items. It's amazing what a fridge raid can yield!

Don't go out and buy all of these things, have a scout around the fridge and pantry first. This can also be a great party piece if guests want to make up their own combination of toppings. This is a lovely way to entertain or to have a 'lounge picnic' if you're too tired to cook.

Base: Crispy Crostini

Take two loaves of half-baked ­ciabatta bread or French baguettes and carefully slice into 1.5cm slices. You can get a greater surface area if you slice at an angle. Brush with olive oil and bake on a baking tray for 10-12 minutes until golden and crispy. Don't over bake them as you may be popping them back into the oven to melt the cheese.

First layer: Spread on a thin layer of one of the following:

  • basil pesto
  • sun-dried tomato pesto
  • black olive tapenade
  • roasted red pepper paté or relish
  • ricotta cheese
  • quince jelly
  • fig jam
  • onion marmalade

Second layer: Add any combination 
you like of the following:

  • salami
  • Parma ham
  • sun-blush tomatoes
  • artichoke hearts in olive oil
  • roasted red pepper strips in brine or olive oil
  • grilled aubergines
  • grilled courgettes
  • pickled mushrooms
  • mozzarella cheese
  • goats' cheese
  • fresh basil leaves
  • anchovies
  • olives
  • Parmesan shavings
  • roasted baby beetroot
  • fresh figs
  • blue cheese
