The raspberry, that quintessential summer berry, finds itself even more versatile in the baker’s kitchen than its cousin, the strawberry. Being less watery than the strawberry and more intense in flavour, the raspberry can be baked, stirred and swirled into everything from buns, cakes and cheesecakes to ice-creams, steamed puddings and compotes.
