Indy Power: Delicious honey, vanilla and coconut flapjacks
Try these delicious honey, vanilla and coconut flapjacks that are really worth their oats.
Everyone loves a good flapjack - and these ones are so satisfying. Traditionally, flapjacks are made with golden syrup but I'm going with local Irish honey that gives them the most gorgeous flavour.
Makes 8. Gluten-free & dairy-free
200g whole gluten-free oats
50g gluten-free oat flour
¼ tsp sea salt
110g coconut sugar
1 tsp vanilla
75ml melted coconut oil
Preheat the oven to 180°C (350°F, Gas Mark 4). In a large bowl, combine the oats, oat flour and salt, and mix well.
Add the honey, coconut sugar and vanilla to a small saucepan on medium heat. Whisk it often, keeping it on the heat until the sugar has been completely dissolved and you have a smooth, thin mixture.
While mixing gradually, pour the sugar mixture into the oats. Then pour in the melted coconut oil and mix well.
Press the mixture very firmly into a lined 8in baking tin. Make sure it's very tightly packed in.
Bake for 30 minutes. Leave to cool on a wire rack for about 20 minutes, then slice.
