Thankfully, in Ireland, over the last number of years, things have changed for people who are coeliac and gluten-intolerant. It’s now the norm, and rightly so, for many shops, cafés and restaurants to offer gluten-free alternatives that are just as delicious as everything else on the menu.

As I have a few friends who are either coeliac or gluten-intolerant, I often find myself baking gluten-free anyway. Ground nuts such as almonds often find their way into brownies, buns and cakes, as in this delicious orange and almond cake, below, which is layered up with a divine citrusy buttercream, and covered in a rich orange glacé icing.
