I love this instant hit of summer sunshine in a glass. Hopefully you have managed to make elderflower cordial from this year's harvest, but if not, a supermarket version will of course work just as well.

Pop the bottle of soda water in the freezer for an hour or two before heading off on your picnic, so as to ensure the drinks are chilled on serving.

Makes about 1L


200ml elderflower cordial

250g raspberries

Juice of 1 large lime

A few large handfuls of ice (optional)

500ml soda water, chilled

1 lime, sliced

Elderflower and raspberry punch


Pour the elderflower cordial into a medium pan and bring to a gentle simmer. Remove from the heat, add the rasp- berries and lime juice and leave to cool completely.

The raspberries will have softened, but squish them a little more with a fork. Then pour the raspberry syrup into a pretty bottle or flask. Pop the ice in if using, top with soda water, decorate the rim of each glass with a slice of lime and serve.
