As spring moves swiftly towards summer, it’s high time for some fresh recipes to mix up our weeknight suppers. Cooking and eating in these brighter evenings is something I cherish at this time of year, and it does affect what I choose to make.

I want simple-assembly meals — a bowl of salad leaves (the good stuff you’ve washed and dressed) always makes a good starting point; perhaps some steak or chicken pan-fried with a punchy sauce, colourful chopped veggies, dips, and proper bread and butter. Our two boys love this style of eating too: a mezze of tasty things to savour. My recipes this week are full of fresh flavours to inspire your new season of eating.
