Cherry & Black Pudding Canapes
The sweet, dark cherries work well with the deep flavour of a good black pudding.
We first came across the combination of cherries and black pudding at a meal at L Mulligan's Grocer in Stoneybatter, Dublin 7. The sweet, dark cherries work well with the deep flavour of a good black pudding. Our favourite black pudding is from Jack McCarthy's in Kanturk.
(makes about 12 canapes)
About 150g of cherries
1 tablespoon of balsamic vinegar
1 tablespoon of runny honey
2 sprigs of fresh rosemary
4 slices of black pudding
Your favourite soft goat cheese
Wafer thin crackers
Wash, halve and stone your cherries and place on a roasting tray. Drizzle vinegar and honey over the cherries. Scatter rosemary leaves, before sprinkling with salt and pepper.
Pre-heat oven to 180C/160C fan/Gas Mark 4.
Roast the cherries for 15 to 20 minutes before removing from the oven and allowing to cool.
Heat olive oil in frying pan and cook pudding slices. Allow to cool.
Spread goat cheese on a cracker and crumble a bit of the cooked black pudding on top.
Top with two or three cherry halves. Finish off with one or two fresh sprigs of rosemary.
