Banana bread with honey ricotta from Russell Ford of the Doyle collection

Russell Ford celebrated 10 years of the Electric Picnic's Theatre of Food with this recipe:

Banana bread with honey ricotta from Russell Ford of the Doyle collection

Makes 1 loaf

Ingredients

4 ripe bananas

110g soft butter

225g caster sugar

1 tsp vanilla extract

2 eggs, beaten

85ml buttermilk

285g plain flour

1 tsp bicarb

½ tsp salt

To finish each slice: handful walnuts, chopped; 1 tsp honey; ricotta

Method

Preheat oven to 160˚C. Line a loaf tin with parchment paper. Mash the bananas with a fork. Cream the butter, sugar and vanilla until soft, white and fluffy. Slowly add the beaten eggs and then the buttermilk. Fold in the dry ingredients and then the mashed banana. Put mixture into tin and bake on 160˚C for 40 minutes, then cover with foil and bake for another 40 minutes.Test with skewer: if it comes out clean then it is ready.

To serve, slice and sprinkle with a pinch of chopped walnuts. Drizzle over a teaspoon of honey and serve with a dollop of ricotta.
