I love having friends around for a bite to eat, especially in the summer. I love even more, where possible, to eat and entertain outside, as it brings a whole new dimension to the evening.

I love options which can be prepared quickly then stored until they are required, without losing their freshness.
We can be quite lazy about salads, depending largely on mayonnaise-based ones, whereas I like to make them colourful and vibrant, with each ingredient and element speaking for itself.
Here, I have chosen some great salads with light oil-based dressings which are great to have in the fridge for either entertaining or to bring to work as a quick lunch option.
