Picnics and camping are two activities in Ireland which generally tend to go hand in hand with umbrellas, rain clouds and lots more unplanned mishaps.
When Ireland does get its day of summer sunshine, however, we Irish know how to enjoy it. Farmer tans are topped up, and every last drop of sunshine is soaked up.
I'm writing this piece about outdoor eating with that in mind. While we might not get endless sunny days, what we do have is determination. So, if you are planning a camping trip or a picnic in the next month or so, then fire ahead with sheer and utter defiance -- even if those clouds are looming.
The recipes here are just a few great ways of making the most of eating outdoors. With a little bit of preparation, you can have everything ready to cook when it suits you.
The fish skewers make a lovely light starter and they are complemented beautifully by a herby dressing. For a meaty main, some hot and spicy pork chops served with a cooling light coleslaw will keep everyone happy.
My favourite discovery this summer is outdoor pizzas and I've mixed it up a little here with a beautiful sweet one, spread with nutella, dotted with summer berries and sprinkled with white chocolate.
