A Cup of fruity Crumble

Easy, casual entertaining is choice of the day when it comes to family gatherings. With that in mind, I have chosen some really great and simple recipes for you.

We are heading into one of the busiest times for home entertaining, with lots of communions happening around the country, and the blackened salmon is an ideal dish for such occasions as it can be prepared in advance and served hot or cold.

My sister Lorraine recently had twin boys, Eddie and Joey, and I plan on cooking this dish for the christening buffet for that very reason.

Salmon takes on flavour well, while the couscous is a great salad option that will last for days in the fridge.

The chicken breasts are a great fiery option and are definitely not for the faint-hearted, but are delicious in a sandwich or as a topping for a quick sandwich or salad.

For dessert, I have chosen my delicious apple and mixed-berry crumble.

I love to serve it in individual portions as it looks more attractive like this, and I like the quirky idea of serving the crumble in the ovenproof teacups.
