Quinoa is one of my favourite seeds and fantastic cooked in salads with lots of herbs and lemon juice. It's a complete protein and packed full of minerals.

Here, it's combined with the superfood of the moment: chia. Full of omega-3, protein, vitamins, fibre and antioxidants, chia seeds really are great all-rounders and make a nutritional addition to salads and smoothies.

Add a handful of berries to the bowl and you've got a breakfast that guarantees a healthy start to the day.

you will need

300g porridge oats

100g quinoa, uncooked

100g chia seed

50g sesame seeds

50g pumpkin seeds

50g sunflower seeds

120g pecan nuts, roughly chopped

100ml maple syrup

100ml sunflower oil

Method

Pre-heat the oven to 200°C. Mix all of the dry ingredients well. Pour over the maple syrup and sunflower oil. Stir well to combine.

Line two baking sheets with greaseproof paper. Spread the mixture over them, flattening with the back of a spoon to create an even surface.

Bake for about 40 minutes until uniformly golden.

Stir every 10 minutes to ensure the seeds and nuts aren't burning.

Leave to cool completely on the trays before storing in an airtight container.
