Mini Spiced Lamb Skewers

These little mini skewers are a great addition to any drinks reception.



1lb/450g diced leg of lamb

1 red pepper, cut into small cubes

½ courgette, cut into small cubes

For the marinade 1 tbsp honey

3 tbsps soy sauce

Pinch of dried crushed chilli flakes

Sesame seeds

Pre-heat the oven to 200°C/400°F/ Gas Mark 6.

Thread three pieces of lamb on to each skewer, alternating with a little cube of red pepper and courgette between each piece of meat.

Meanwhile, in a separate bowl, mix together the honey and soy sauce with the crushed chilli flakes.

Arrange the lamb and vegetables skewers on a deep roasting tray, lined with baking parchment and then pour the marinade over the top, mixing the skewers well to ensure they are evenly coated with the marinade.

Cook for 10-12 minutes in the pre-heated oven. Sprinkle with sesame seeds immediately and serve either hot or cold.
