Low fat chicken skewers
Something tasty, quick and low calorie - just what is needed for the first Monday of January.
You will need
2 chicken fillets per person
200ml low-fat natural yogurt
2 tbsp tikka spice powder
Cut the chicken into strips, then mix the low-fat yogurt and the tikka spice in a bowl and add the chicken.
Cover the bowl with clingfilm. Leave it in the fridge for between four and five hours to marinate. Once marinated, thread the mini-fillets on to wooden kebab skewers, one fillet per skewer.
Now lay the skewers on to a baking tray and cook them in the oven at 200°C for 15 minutes, turning occasionally. Alternatively, you can cook them on a George Foreman grill.
