Lavender, Lemon and Earl-Grey Iced Tea

Iced tea is a refreshing break from lemonade. The subtle addition of lavender makes this the perfect drink to sip in the garden. This versatile drink is soothing and calming when served hot on colder days. Makes one litre.


1 litre boiling water

1 Earl Grey tea bag

3 sprigs of lavender and extra to serve

Juice of ½ lemon

3 tbsps honey Method

Place the boiling water in a pan. Add the tea bag and lavender and leave to steep for 10 minutes before removing both. Add the lemon juice and stir in the honey until dissolved.

Leave to cool before bottling. Chill well before serving with additional lavender sprigs.
