Homemade Fortune Cookies
3 egg whites
60g icing sugar
45g butter, melted
70g plain flour
These fortune cookies can be a bit tricky to make, but the secret is not to put too many on the baking sheet at once and to work really fast when the cookies are out of the oven. They are perfect for entertaining and you can have lots of fun creating personalised fortunes for your guests. Just try not to get too personal! Makes about 30 cookies.
1 Pre-heat the oven to 180°C/350°F/Gas Mark 4. In a bowl, whisk the egg whites until they become light and frothy. In a small bowl, mix together the icing sugar and melted butter until smooth. Add the sugar and butter mixture to the egg whites and stir through. Sift the flour in, a little bit at a time, stirring constantly until you get a nice smooth batter.
2Using a knife, spread the batter in four x 8cm circles on a greased non-stick flat baking tray. Place in the oven for four to five minutes or until the edges just begin to brown. The second the cookies are removed from the oven they start to harden, so speed is the key here.
3 Remove one cookie from the tray, fold in half and fold it again over the edge of bowl, to get that distinctive fortune cookie shape. Place on a wire rack to cool and repeat with the rest of the batter.
4Add your personalised fortunes to them and store in an airtight container until you are ready to serve.
