Gretta's Spelt Bread


250g white spelt flour

500g wholegrain spelt flour

½ tsp salt

30g cream of tartar

1 tbsp bread soda

1 tbsp brown sugar

1 tsp olive oil

½pt soya milk

½pt of water

1 tbsp of baking powder,

15 small new potatoes, boiled


Mix all the dry ingredients together. Make a well in the centre, mix the liquids and pour in. Mix by hand. Add the potatoes. Do not overwork. Shape into a traditional soda-bread shape. Criss cross the top with a knife and sprinkle with some flour. Bake at 175°C for 35-40 minutes. You can also add bacon and fried onions.
