Fig and Blue Cheese Bites
These fig and blue cheese bites come with a wonderful contrast between the sweet and sticky figs, the tangy balsamic vinegar and the creamy, crumbly Cashel blue cheese. Very simple and easy to prepare, too.
Recipe makes 10 bites.
YOU WILL NEED
10 slices of brioche
100g Cashel blue cheese, crumbled
2 tbsps honey
1 tbsp fresh thyme leaves
60ml of balsamic vinegar
Using a 5cm cutter, cut the circles out of the brioche, then toast each side of them under the grill until golden.
Cut the figs in half lengthways, then place them in a roasting tin and drizzle the honey over the top. Next, put the figs under a hot grill for about 5-10 minutes until they are reduced and caramelised.
Place the balsamic vinegar in a small saucepan and reduce over a medium heat until it becomes thick and syrupy.
Spread the blue cheese over all the toasted brioche circles, then add a fig on top and sprinkle this with thyme.
Drizzle the balsamic reduction over the top and serve immediately.
