LILLY HIGGINS' COCONUT BISCUITS
Mixture makes between 25 and 30 scrummy biscuits.
YOU WILL NEED
200g caster sugar
150g self-raising flour
110g butter, melted
1 egg, lightly beaten
Preheat oven to 180°C/350°F/gas mark 4. Line 2 large baking trays with greaseproof paper. Put everything in a large bowl and stir slowly until just combined. Place teaspoons of the mixture on to the tray, spacing well apart. Bake for 10 to 12 minutes or until golden on edges. Leave on trays for 5 minutes before cooling on rack.
