Carrot Salad with Multi-Seed Dressing
This is a delicious salad which I love to serve with barbecues. I like the combination of seeds in this particular recipe.
YOU WILL NEED
1 tsp wholegrain mustard
1 tsp honey
Juice of 1 lemon
6fl oz/175ml olive oil
8 large carrots, coarsely grated
2 oranges, segmented
4 tbsps mixed seeds (pumpkin, sesame, sunflower, poppy, cumin)
Put the wholegrain mustard into a large bowl with the honey and lemon juice. Season lightly with a little salt and pepper
Whisk these ingredients together until well mixed, then gradually whisk in the oil until it is well incorporated. The mixture will thicken and emulsify. Store in a screw-top jar until required.
Meanwhile place the grated carrots into a large mixing bowl. Add the orange segments and mix well.
Pour the dressing over the top of the carrots and mix well.
Scatter in the seeds and mix all the ingredients thoroughly. Serve as required.
