Buzz word gin: Shake up a Tomato and Basil Martini

With the launch of a trendy new Dublin gin bar, watch and recreate one of their favourite cocktails for your own summer party...

From New York to London, those fond of a bevvie or two are sipping gin-based cocktails like there’s no tomorrow.

Always eager to swing with trendsetters across the water, the launch of a summer gin bar in our own capital was cause for tipple excitement.

While the rooftop bar at The Maker Hotel has been a dreamy venue to spend any sunny evening for well over a year now, the launch of their new gin bar is sure to thrill the thirsty.

 “Gin is such a buzz word around at the moment. There’s so much interest and creativity surrounding it. It’s moving from North America to London and finally now into Dublin,” said Paul Malone, Bar Manager at the Marker Hotel.

“There’s so many innovative ideas and cocktails at the moment incorporating infused gin and it’s a great time to have a bit of fun with it.”

In the above, the first in a weekly series of five, Paul demonstrates how to recreate his Tomato and Basil martini at home.

“For this cocktail I have made a basil infused Bombay.  I chose Bombay because the citrus notes and the coriander spiciness of the Bombay marries perfectly with the basil,” he said.

Tomato and Basil Martini


50mls of Bombay infused with basil leaves

50mls of tomato consommé

17mls of Lillet Blanc

5mls of lime juice


Shake all the ingredients together with ice before pouring into a coupe glass.

Garnish with a dehydrated tomato and enjoy.
