Baked Spiced Apple and Pear Crumble

Dorcas Barry

Enjoy delicious seasonal fruit with a wheat-free and dairy-free crumble topping.

This topping is made with oats, which supply slow-release energy and help to keep cholesterol levels low.

Dates are used for sweetness and, along with maple syrup and ground almonds, provide a lovely flavour combination with the pears.

Eat this dessert straight from the oven with the topping of your choice.

My favourite is natural yogurt sweetened with a little honey.

you will need

2-3 Irish Bramley apples, skinned and cut into chunks

2 pears, skinned and cut into chunks

30g raw cane sugar

100g oats

25g ground almonds

6 dates, stoned (fresh if possible)

1 tbsp maple syrup

2 tbsps organic virgin coconut oil

½ tsp ground cloves

1 level tsp cinnamon

Preheat the oven to 180°C/350°F/ Gas Mark 4. Place the apple and pear chunks in a heatproof dish and sprinkle with the sugar. Pour over two tablespoons of water, cover with tinfoil and bake for 20 minutes.

While the fruit is cooking, prepare the crumble. Place the oats, ground almonds, dates, maple syrup, coconut oil and spices into a food processor.

Don't forget to make sure that all the stones are removed from the dates, or you will damage the blade in the machine.

Process until all the ingredients are well combined.

Take the fruit out of the oven, remove the foil and spread the crumble on top. Put the dish back in the oven for a further 15-20 minutes, or until browned and bubbling.
