A pub in Monaghan is leading the way towards efficiency in Irish hospitality.
Andy's Bar and Restaurant in Monaghan town is one of Ireland's first 'eco-pubs'. Seán Redmond, who works as a chef at the family's pub, says their energy efficiency drive began after the premises was destroyed in a fire.
With support from Sustainable Energy Authority Ireland (SEAI) and the cross-border Sustainable Together through Environmental Management (STEM) project, the Redmond family started off by installing better insulation.
They then brought in solar panels and stopped using fridges with glass doors, which lose more energy.
"I was driven more by the environmental impact it would have, rather than the money, but when I saw the savings I was shocked." Sean recalled.
After the early successes, Seán and his family started to examine leftover food that was being thrown away and are now focused on reducing their waste. Seán says the pub is now cited as an inspiration by Fáilte Ireland and the SEAI.

One of my proudest acts as CEO has been to tackle food waste by working in partnership with FoodCloud, an Irish social enterprise that links businesses who have too much food with groups and organisations who don’t have enough.
