'Meat' product nears its finish

An EU-funded project to develop a meat replacement product from vegetable proteins is about a year from completion.

Researchers have developed a production plant, reported to be no bigger than two table-tennis tables, that can produce up to 500kg of the meat substitute each day.

By boiling plant seeds and water and slowing cooling, the scientists say that the protein molecules start to form chains that rise to a fibrous structure similar to meat. The focus is now on perfecting the flavour.
